Wondering what healthy party food you can serve on Super Bowl Sunday that won’t take you off the Misner Plan? We have great news for you! Chef Eddie Esposito has been working in the kitchen, and we think you will be very happy with what he has come up with.
First Eddie worked with celery heart to make a tasty and healthy chip that can be dipped in a delicious hummus.
Start with a firm organic celery heart (may be labeled as “celeriac”) and remove the rough, woody outer skin:
Then cut into thin slices. You don’t want the slices too thin, or they will not support the dip when finished. And if they are too thick, they won’t crisp up nicely. Try to cut them evenly about 1/8 inch wide. Coat both sides of each slice with a thin layer of freshly pressed olive oil and sprinkle Chef Eddie’s Santa Fe Seasoning Mix (recipe below) on both sides.
After laying the slices flat on your baking pan, bake at 375 degrees for20 minutes or until the color develops. You can turn them once halfway through baking. They will crisp up further as they sit out of the oven.

Chef Eddie’s Spicy Santa Fe Seasoning Mix:
2 tablespoons Ancho or pure chili powder
2 teaspoons ground cumin
2 tablespoons paprika
1 teaspoon black pepper
1 teaspoon white pepper
1 tablespoon ground coriander
1/2 teaspoon cayenne pepper
1 tablespoon garlic powder
1 teaspoon crushed red pepper
1 tablespoon Real Salt sea salt
1 tablespoon dried oregano
